Is there an issue using 3/4" plywood and imperial fasteners instead of the metric ones in the plans? Wondering if there will be a 1mm error stack due to the thickness difference that will mess up the finished project.

I think you can do it, if you go slowly, checking each step, and rectifying the necessary parts.1mm is not too much difference.
